
Brussels sprouts have gotten a bad rap because they can be described as bitter and gassy, however when caramelized and cooked properly, they can turn into a delicious, irresistible and healthy side dish!
Not only can they be extremely tasty but they have tons of nutritional value! Brussels sprouts are packed with vitamin C, a key component for keeping your immune system strong. They're also a great source of protein, iron, folic acid and other B vitamins that can help prevent certain birth defects such as spina bifida. Another reason to cook up these little leafy greens is for their cancer-fighting benefits! A 2011 study published in the Journal of Food Science notes that Brussels sprouts contain compounds called glucosinolates and isothiocyanates that can reduce your risk of cancer.
So take a chance and good up some healthy and delicious Brussels sprouts tonight!
Ingredients
1 1/2 lbs Brussels sprouts, halved
3 tbsp olive oil
3/4 tsp kosher salt
1/2 tsp ground black pepper
1/2 tsp ground black pepper
2 tbsp balsamic vinegar
2 tsp honey
Directions
1.Preheat oven to 425°.
2.Line a baking sheet with aluminum foil or use a silicone baking mat.
3.In a large bowl, toss Brussels sprouts with 2 tablespoons of olive oil, kosher salt and freshly cracked black pepper to coat thoroughly.
4.Transfer the Brussels sprouts to baking sheet and roast until tender and caramelized, about 20 minutes.
5.Place Brussels sprouts back in bowl. Add remaining tablespoon olive oil, balsamic vinegar and honey and toss to coat evenly. Taste and season with kosher salt if necessary and serve.
